Meal prep for breakfast?
This simple recipe only uses 5 ingredients that combine to make a delicious breakfast. If you’re short on time and can’t cook a full meal this recipe can come in handy. You could also try cooking this for a group or family breakfast. Make it your own recipe and add in extra ingredients you enjoy with your eggs.
Yield: 4-6 servings
Prep Time: 10 minutes
Cook Time: 45 minutes
Total Time: 55 minutes
Ingredients:
8 Eggs
½ cup Diced Sweet Onions
½ cup Diced Green Peppers
¾ cup Salsa
1 cup Shredded Cheese
Macros per serving (¼ of the pan):
Protein-20 grams
Carbs-12 grams
Fat-17 grams
Calore per serving-280
(Disclaimer: the macronutrient numbers above are a rough estimate and are not exact)
Instructions:
Preheat oven to 350 degrees.
Combine eggs, diced onions, green peppers, salsa and ½ cup of cheese into mixing bowl.
Whisk eggs and mix ingredients. Coat the 8×8 inch pan with any cooking spray or cooking oil (I used olive oil).
Pour mixture into 8×8 inch pan.
Cook in oven for 45 minutes. Sprinkle the remaining ½ cup of cheese of the top for the last 5 minutes of baking.
Cut into 4 quarters and serve.

Yum! Made a version of this for breakfast today. I used ricotta because that was all I had for cheese. I also didn’t have salsa, which would have definitely perked up the flavor. Next time I’ll use either salsa or green chile. Thanks Andrew!
